1 cup Spelt flour (heaped)
½ Tbsp Baking powder
¼ tsp salt
½ tsp ground cinnamon
2 small eggs
cup honey
½ Tbsp vegetable oil
½ tsp vanilla extract
cup milk
¼ cup dried Cranberry
¼ cup Chocolate chip
¼ cup chopped Nut

Preparation steps

1.
Heat the oven to 200°C (180° fan) 400°F gas 6. Place 6 paper cases in a muffin tin.
2.
Sift the the flour, baking powder and salt into a mixing bowl.
3.
Whisk together the eggs, honey, oil and vanilla until blended. Whisk in the milk.
4.
Stir the milk mixture into the flour mixture until just blended. Gently stir in the cranberries, chocolate chips and nuts.
5.
Spoon the mixture into the paper cases and bake for 15-20 minutes until golden and a skewer inserted in the centres comes out clean.
6.
Cool in the tin for 5 minutes, then place on a wire rack to cool completely.
