3 Tbsps brown sugar
1 halved and seeded Vanilla bean
1 pinch salt
1 egg yolk
6 ozs Whole Grain Spelt Flour
3 Tbsps ground flaxseed

Preparation steps

1.

In a bowl, beat the butter with the sugar, vanilla bean seeds and salt until light and fluffy. Stir in the yolk. Add the spelt flour and flaxseed, and knead until a smooth dough is formed. Shape into a disk, wrap in plastic wrap and refrigerate for 2 hours.

Preheat the oven to 200°C / 390°F. Line 2 baking sheets with parchment paper.

On a lightly floured surface, roll the dough into an even layer. Cut 40 equal-sized pieces. Roll into balls and place on the baking sheet. Bake until golden, about 10-12 minutes. Remove from baking sheet and cool completely on a wire rack.
