Spelt and Flaxseed Cookies

These cookies are packed with nutrients, including protein and omega-3 fatty acids from the flaxseed and digestive fiber from the spelt.
Add pieces of dark chocolate in these cookies for added flavor and antioxidants.

- 4 ozs soft butter
- 3 Tbsps brown sugar
- 1 halved and seeded Vanilla bean
- 1 pinch salt
- 1 egg yolk
- 6 ozs Whole Grain Spelt Flour
- 3 Tbsps ground flaxseed
Preparation steps
In a bowl, beat the butter with the sugar, vanilla bean seeds and salt until light and fluffy. Stir in the yolk. Add the spelt flour and flaxseed, and knead until a smooth dough is formed. Shape into a disk, wrap in plastic wrap and refrigerate for 2 hours.
Preheat the oven to 200°C / 390°F. Line 2 baking sheets with parchment paper.
On a lightly floured surface, roll the dough into an even layer. Cut 40 equal-sized pieces. Roll into balls and place on the baking sheet. Bake until golden, about 10-12 minutes. Remove from baking sheet and cool completely on a wire rack.
