- Soda water (to serve)

Preparation steps

Juice the lemons, reserving the skins, and place the juice in a pan with the sugar and water.

Bring to a boil, stirring from time time time, then remove the pan from the heat and add the skins.

Let the mixture steep for 24 hours then strain through a sieve.
