1 onion (finely chopped)
2 red Bell pepper (deseeded and chopped)
4 slices ham
2 Tbsps butter
6 eggs (beaten)
4 slices Bread (toasted)

Preparation steps

1.
Heat the oil in a pan and gently fry the onion until soft but not brown. Add the bell peppers and continue cooking, stirring from time to time.
2.
Meanwhile, heat the grill (broiler) to its highest setting and grill the ham until lightly browned. Set aside and keep warm.
3.
Heat the butter in a small pan and add the eggs. Cook until scrambled then season with salt and pepper and remove the pan from the heat.
4.
When the bell peppers are tender, stir in the scrambled eggs and spoon into serving dishes. Spread the toasted bread with the butter and serve with the piperade the the grilled ham.
