2 great white onions
4 large Tomatoes (or yellow tomatoes)
2 Tbsps finely chopped Basil
olive oil

1 pinch cayenne pepper

Preparation steps

Peel and halve the onions, the cut crosswise into slices. Rinse the tomatoes then blanch in boiling water. Remove the tomatoes from the water. Peel and finely dice the tomatoes. Heat 3 tablespoons of oil in a pan, then sauté the onions gently over medium heat. When the onions are soft, add the tomatoes and sauté another 2-3 minutes. Add the sugar, then season to taste with salt, pepper, and cayenne pepper.

Cook the spaghetti on boiling salted water until al dente. Drain the pasta thoroughly, add to the pan with the sauce, and toss to combine. Transfer to plates, garnish with freshly grated parmesan or pecorino cheese, and serve while still hot.
