1 bunch Basil
2 garlic cloves
2 fresh Peperoncini (or chile pepper)
4 Tbsps extra-virgin olive oil
salt
500 grams Spaghetti
50 grams freshly grated pecorino romano

Preparation steps

Blanch tomatoes for a few seconds. Peel, quarter, core and cut into very small cubes. Rinse basil, shake dry and chop coarsely. Peel garlic and finely chop. Rinse chile peppers, cut lengthwise, remove seeds if necessary and finely chop.

Mix ingredients, marinate with oil and season with salt. Leave overnight in a cool place but do not refridgerate. Just before serving, cook pasta in boiling salted water until al dente. In a warmed bowl, mix the pasta with the cold sauce and top with pecorino if desired. Serve immediately.
