- 400 grams Spaghetti
- salt
- 100 grams blanched, ground almonds
- 4 Tbsps coarsely chopped almonds
- 250 grams Ricotta cheese
- 2 Tbsps freshly grated Parmesan
- 1 Nutmeg (freshly grated)
- ½ tsp cinnamon
- 100 milliliters Whipped cream
- 3 Tbsps olive oil
- freshly ground peppers
- 2 Tbsps butter

Preparation steps
1.
Cook spaghetti in plenty of boiling salted water until al dente. Drain, collecting 1 cup of the cooking water. Combine ground almonds with chopped almonds, ricotta, Parmesan, nutmeg, cinnamon, cream and olive oil and mix well.
2.
Add some of the cooking water to adjust consistency, mix well and season with salt and pepper. Mix spaghetti with almond sauce, add butter flakes, season to taste and serve on warmed plates.
