1 Tbsp olive oil
20 grams butter
400 grams Spaghetti
3 egg yolks
100 grams freshly grated Parmesan
salt

2 fresh marjoram

Preparation steps

1.

Cut the ham into thin strips. Heat the butter and olive oil in a pan, and sauté the ham. Cook the spaghetti in boiling salted water until al dente.

Beat the egg yolks in a bowl until forthy. Stir in half of the parmesan cheese, then season with salt and freshly ground pepper.

3.

Drain the spaghetti thoroughly, then add to the pan with the ham. Remove from the heat, add the egg mixture, and toss quickly until combined.

4.

Rinse and dry the marjoram. Remove the leaves from the stems, and sprinkle over the spaghetti. Garnish with the remaining parmesan, and serve.
