- 3 Tbsps sunflower oil
- 4 Chicken breasts (skinned and sliced into strips)
- 4 scallions (chopped)
- 2 red peppers (cut into strips)
- 1 cup canned Bamboo shoots
- 5 Tbsps soy sauce
- 2 tsps Corn starch
- 1 ½ cups Bean sprout
- 0.333 cup Cashews
- 1 Tbsp sesame oil
- 2 Tbsps Oyster sauce

1.
Heat the oil in a wok or large frying pan until smoking, add the chicken and stir fry for 4 minutes, stirring all the time. Remove the meat and set aside.

Add the spring onions, peppers and bamboo shoots and stir fry for 3 minutes.

Mix the soy sauce with the cornflour and a little water and stir into the vegetables.
4.
Return the meat to the pan, stir in the bean sprouts, cashew nuts, sesame oil and oyster sauce, heat through and serve immediately.
