2 cloves garlic cloves (finely chopped)
1 Tbsp fresh ginger
1 Tbsp Lemongrass
3 Tbsps soy sauce
3 Tbsps sesame oil
32 medium Mushrooms (of equal size)
Oil
For the sauce
1 red chili pepper (deseeded and very finely chopped)
1 clove garlic cloves (finely chopped)
6 Tbsps chunky Peanut butter
2 Tbsps Lime juice
6 Tbsps soy sauce
4 Tbsps sesame oil
cup Coconut milk
You will also need
8 wooden Skewer
2 chopped scallions
1 Tbsp roasted Peanuts (chopped)

Preparation steps

In a bowl, mix together the garlic, ginger, lemongrass, soy sauce and sesame oil and add the mushrooms. Marinate for around 4 hours, turning frequently.

For the sauce, heat the chilli and garlic gently with the peanut butter. Stir in the lime juice, soy sauce and sesame oil and finally add the coconut milk. Stir the sauce until smooth and check the seasoning.

Take the mushrooms out of the marinade and thread 4 mushrooms onto each skewer. Grill the mushrooms on the barbecue on all sides until golden brown, brushing with the marinade from time to time. Alternatively, heat a little oil in a frying pan and fry the mushroom skewers until golden brown, brushing with marinade.

Serve the cooked skewers with the sauce and garnish with spring onions and peanuts.
