- 3 Chicken legs
- salt
- 2 cups white Cabbage (shredded)
- 2 cups chinese Cabbage (shredded)
- 1 carrot (cut into thin batons)
- 1 Tbsp mint (chopped)
- 1 Tbsp cilantro (chopped)
- 3 Tbsps shelled Peanuts
- For the dressing
- 1 red chili pepper (finely chopped)
- 1 clove garlic cloves (finely chopped)
- 2 Tbsps sugar
- 4 Tbsps Lime juice
- 2 Tbsps soy sauce

Preparation steps
1.
Put the chicken legs into boiling, salted water and then simmer for about 40 minutes. Drain (the stock can be used for another purpose), leave to cool, and remove the skin and bones.

Mix the chilli and garlic thoroughly with the sugar and lime juice. Season the dressing with soy sauce.
3.
Roast the peanuts in a dry frying pan until golden brown. Cut the meat into strips and put into a bowl.
4.
Add the white cabbage, the Chinese cabbage, carrot and herbs. Carefully stir in the dressing and mix well. Scatter the peanuts over the salad and serve.
