2 Tbsps vegetable oil
1 onion (finely chopped)
1 clove garlic cloves (finely chopped)
3 Tbsps yellow Curry paste
2 large Chicken breasts (skinned and cut into chunks)
2 cups chicken stock
1 ⅔ cups Coconut milk
1 Tbsp Fish sauce
1 Lime (juiced)
7 ozs Rice noodles (cooked according to packet instructions and kept warm)
2 red chili peppers (sliced)
1 Tomato (deseeded and sliced)
cilantro (to garnish)
Bean sprout (to serve)
Limes (to serve)

Preparation steps

1.
Heat the oil in a large pan and gently cook the onion and garlic until soft but not brown.
2.
Stir in the curry paste, cook for 2 minutes then add the chicken, stock and coconut milk.
3.
Bring to a boil then simmer gently for 25 minutes. Add the fish sauce and lime juice, season with salt and pepper and pour into warmed bowls.
4.
Add the noodles to the bowls then scatter over the sliced chillis, tomato and coriander leaves. Serve with bean sprouts and lime slices alongside.
