Preparation steps

Grease the souffle molds with butter. Preheat the oven to 200°C (approximately 400°F).

Separate the eggs. Peel the garlic and squeeze through a press. Beat the butter with the egg yolks, garlic and nutmeg until fluffy. Add the grated cheese, alternating with the cream and crème fraîche. Beat the egg whites until stiff and fold into the mixture. Sift the flour over the top, season with a pinch of salt and gently fold into the batter. Spoon the mixture into the prepared ramekins and bake until golden brown, about 15 minutes. Carefully remove from the molds and serve immediately.
