- For roasted potatoes
- 16 ozs fresh Sweet potato (peeled and sliced into wedges)
- 4 fresh chili peppers (washed and whole)
- ⅓ cup vegetable oil
- salt (to taste)
- Black pepper (to taste)
- For fish
- 3 Tbsps Chili sauce
- 2 Tbsps Orange marmalade
- 1 tsp soy sauce
- 2 tsps garlic cloves (minced)
- salt (to taste)
- Black pepper (to taste)
- 4 fresh Cod (approx. 175g|6 oz each)
- 2 cups Tomato salsa (prepared)

Preparation steps

For roasted potatoes:

Preheat oven to 450°F

In a medium bowl add sweet potatoes, chili peppers, vegetable oil, salt and pepper. Toss gently to coat.

Arrange mixture in a single layer on a large baking sheet. Bake 40-50 minutes or until sweet potatoes are fork tender. While potatoes cook, prepare fish.

In a small bowl combine chili sauce, marmalade, soy sauce, garlic, salt and pepper.

Spray baking sheet with non-stick cooking spray. Place fish fillets on sheet and brush with the chili sauce mixture

Bake fish in oven for 10-15 minutes or until cooked through and easily flakes when tested with a fork.
9.
Serve immediately with roasted potatoes, peppers and a side of salsa.
