Place the flour in a bowl with the salt and yeast, add the butter and water and mix to bring it together.
Place on a floured surface and knead for 5 minutes until smooth and elastic. Return to the bowl, cover loosely and leave to rise in a warm place for 1 hour or until doubled in size.
Tip onto a floured surface, knead for 5 minutes, then tear into 12 equal pieces. Roll them into a ball, then flatten into a round shape about 15cm wide. Place on a baking sheet and leave in a warm place for 15 minutes.
Heat a heavy based frying pan over a medium heat and warm a little oil. Add the flatbreads, one or two at a time and cook for 3 minutes. Once blistered and darkened in patches, turn over and cook the other side.
Split and eat with hummus.
