- 6 large Strawberries
- 3 Gelatin sheet
- 1 ¼ cups Quark
- 1 ½ cups cream (48% fat)
- 1 tsp vanilla extract
- ⅓ cup superfine caster sugar
- 3 Tbsps finely chopped almonds
- 3 Tbsps freeze-dried Strawberries

Preparation steps
1.
Slice the strawberries and stand around the edges of 6 individual serving glasses.
2.
Soften the gelatine leaves in a small bowl of cold water for 5 minutes.
3.
Whisk together the cream, vanilla and sugar until soft peaks form.
4.
Squeeze the excess water out of the gelatine and place in a pan. Add 2-3 tablespoons of the whipped cream and over a very low heat, stir the mixture until the gelatine has dissolved.
5.
Pour the gelatine mixture into a bowl, then add about 225 ml|1 cup of the whipped cream and whisk to combine.
6.
Fold in the remaining cream.
7.
Gently fold the quark into the cream. Divide the mixture carefully between the glasses. Chill for 4-6 hours until set.
8.
Sprinkle the top of the desserts with chopped almonds and freeze-dried strawberries.
