Preparation steps

Saute the diced potato and the leek in hot butter and oil in a large pan. Pour over the vegetable stock and bring to the boil. After 5-8 minutes, add the courgette and cook until the vegetables are soft.

Blend to a fine purée using a stick blender and season with salt, ground black pepper and nutmeg. Stir in the cream and season to taste with sugar and lemon juice.
3.
Serve in wide bowls, sprinkled with chives.
