- 10 cups Tomatoes (diced)
- 1 ½ tsps black peppercorns
- 1 ball Mozzarella
- 1 bay leaf
- 12 Basil
- 3 Tbsps olive oil
- salt

Preparation steps
1.
Place the diced tomatoes in a juicer and juice them. Finely sieve tomato juice into a pan.
2.
Add the green pepper and salt. Heat without bringing to the boil for 10 minutes.
3.
Meanwhile, cut the mozzarella into small cubes and julienne the basil leaves.
4.
Divide the tomato veloute between 4 bowls, add the mozzarella cubes and a dash of olive oil.
5.
Sprinkle with snipped basil and serve immediately.
