- 1 onion (diced)
- 2 garlic cloves (diced)
- 1 ⅓ cups Celeriac (diced)
- 1 carrot (diced)
- 2 Tbsps olive oil
- 1 Tbsp tomato puree
- 2 ½ cups vegetable stock
- 5 ½ cups Tomatoes (diced)
- 2 sprigs Basil
- Sea salt
- sugar
- cayenne pepper
- Plus
- 1 Tbsp Basil (finely chopped, to garnish)

Preparation steps
1.
Fry the onion, garlic, celeriac and carrot for 2-3 in hot oil. Stir in the tomato puree and quench with the stock. Add the tomatoes to the pan, stir in the basil and simmer for around 30 minutes.
2.
Puree the soup and sieve. Bring back to the boil and add a little stock depending on the desired consistency. Season with salt, a pinch of sugar and cayenne pepper.
3.
To make the croutons fry the bread in hot butter and pat dry with kitchen paper. Sprinkle the croutons into the soup along with the basil and serve.
