- 700 grams waxy potatoes
- salt
- 2 small onions
- 90 milliliters Beef broth
- 1 bunch Radish
- 300 grams sliced Smoked salmon
- 8 leaves Lollo rossa
- 2 Tbsps parsley (coarsely chopped)
- 1 Tbsp mint
- Basil
- 3 Tbsps olive oil
- 2 Tbsps lemon juice

Preparation steps
1.
Rinse the potatoes and cook for about 25 minutes in boiling salted water. Remove from heat, drain and peel.
Peel the onions and cut into thin rings. Pour the broth in a pot and bring to boil, then add the onion rings and cook until soft.

Cut the potatoes into bite-sized chunks, mix with the broth and let rest for 20 minutes.

Rinse the radishes, remove stems, cut in half and cut into small slices. Shred the salmon into bite size pieces. Rinse the lettuce, spin dry and pluck the leaves.
4.
Mix the radishes, the salmon, herbs, oil and lemon juice with the potatoes, season with salt and pepper to taste and serve in bowls.
