400 grams Puff pastry dough
Pastry flour (for dusting)
6 Leeks
8 eggs
30 milliliters milk

150 grams Smoked salmon (in slices)

Preparation steps

Preheat the oven to 210°C (approximately 410°F). Roll out the puff pastry on a floured surface. Cut into 8 equal rectangles. Spread on a baking sheet lined with parchment paper and bake in the preheated oven until golden brown, about 20 minutes.

In the meantime, rinse the chives, pat dry with paper towels and cut into rolls. Mix the eggs and milk together and season with salt and pepper. Melt the butter in a non-stick frying pan and cook the eggs while stirring 3-4 minutes to scrambled eggs.

Cut the salmon into strips. Distribute 4 puffs on a platter and top with the scrambled eggs and salmon. To serve, sprinkle with chives and cover with remaining puffs.
