- 4 Smoked salmon
- 1 Tbsp butter
- 8 slices Toast
- 1 bunch Arugula
- Walnut oil
- balsamic vinegar

- 4 small Portion forms
- Plastic wrap

Preparation steps
1.
Beat eggs with 3 tablespoons of water and chives. Season with salt and pepper. Line the serving ramekins with plastic wrap. Lay one slice smoked salmon in each ramekin, so that it hangs slightly over the edge.
2.
In a skillet, melt butter. Add eggs and cook, stirring, until scrambled. Immediately, divide warm eggs among ramekins. Press eggs firmly with a spoon and fold overhanging salmon over the top.
3.
Toast bread and cut out into circles to fit the ramekins.

Place 2 toast circles on each plate.
5.
To serve, place some arugula on one of each of the toast circles. Drizzle with a little oil and balsamic vinegar. Invert egg and salmon ramekins onto the remaining toast circles.
