- 8 fresh eggs (lightly whisked)
- salt (to taste)
- freshly ground Black pepper (to taste)
- 8 ozs thinly sliced Smoked salmon
- 4 sprigs fresh Dill (for garnish)
- 1 fresh lemon (cut into wedges)
Preparation steps
1.
Melt the butter in a nonstick skillet, set over low heat. Increase the heat to medium and add the eggs. Season to taste with salt and pepper.

Cook the eggs, stirring constantly with a wooden spoon, until just set.

Divide the eggs evenly among serving plates. Top with smoked salmon and garnish with dill. Serve with lemon wedges.
