- 2 whole-grain bagels
- 4 eggs
- 75 milliliters Whipped cream
- 1 pinch Nutmeg
- salt
- peppers
- 1 Tbsp vegetable oil
- 2 Tbsps butter
- 4 slices Smoked salmon
- ½ handful Arugula

Preparation steps

Break the eggs into a bowl and whisk together with the cream. Season with salt and pepper.

Cut the bagels in half horizontally and brush the cut surfaces thinly with the butter. Toast the bagels in a hot pan briefly with the buttered side down. Remove from pan and place on 2 plates. Pour the oil into the pan and heat until it shimmers. Add the egg mixture and cook while stirring. Divide the scrambled eggs between bagels. Rinse, shake dry and trim arugula. Place arugula on bagels and top each with 2 slices of salmon. Serve hot.
