- 250 grams smoked Fish (such as char or trout)
- 1 handful Spinach
- salt
- ½ handful Basil
- 120 grams cream cheese
- 3 Tbsps Whipped cream
- freshly ground peppers
- 1 tsp lemon juice

Preparation steps
1.
Remove skin and bones from fish and cut into pieces. Rinse spinach well to remove grit. Blanch spinach in salted boiling water, about 1 minute. Rinse with cold water and drain.

Squeeze spinach to remove excess water and finely chop. Rinse, shake dry and finely chop basil. Combine fish, cream cheese and cream in a blender. Puree until smooth.
3.
Mix in chopped basil and spinach season to taste with salt, pepper and lemon juice. Serve with toasted ciabatta or bread sticks.
