½ cup all-purpose flour
2 cups powdered sugar (plus extra for dusting)
cup Almond flour
5 egg whites
0.333 cup unsalted butter (melted)
1 unwaxed lemon (finely grated zest)

Preparation steps

1.
Heat the oven to 180°C (160° fan) 350°F gas 4. Grease 12 friand tins and dust with a little flour.
2.
Sift the flour and sugar into a mixing bowl, then stir in the ground almonds.
3.
Whisk the egg whites lightly until frothy.
4.
Stir into the dry ingredients with the melted butter and lemon zest until well combined.
5.
Spoon the mixture into the tins and bake for 25-35 minutes until golden and a skewer inserted in the centre comes out clean. Cool in the tins for 5 minutes, then place on a wire rack to cool completely.
6.
Dust with icing sugar just before serving.
