Ingredients

For the dough
1 cube Yeast (42 grams)
250 milliliters lukewarm water
5 Tbsps olive oil
salt
500 grams Pastry flour
For the topping
800 grams button Mushroom (cleaned and sliced)
2 egg yolks
3 Tbsps lemon juice
3 onions (finely diced)
2 garlic cloves (minced)
3 Tbsps olive oil
300 grams Mozzarella (diced)
8 Tomatoes (washed, skinned and diced)

Preparation steps

1.

For the dough, place the flour in a bowl, make a well in the center. Crumble the yeast into a little water and pour into the well. Sprinkle with a little flour and let stand for 15 minutes. Add the remaining water, salt and oil and process everything into a smooth dough.

Cover and let sit in a warm place for 1 hour.

Saute the onion in olive oil until translucent. Stir in the garlic and diced tomatoes. Season with salt and pepper. Let simmer for a few minutes.

Mix together the mushrooms, egg yolks, lemon juice and oregano. Season with salt and pepper.

5.

Knead the dough and roll out 36 circles about 10 cm (approximately 4 inches). Spread with tomato sauce, top with mushrooms and sprinkle with mozzarella.  

6.

Bake in an oven preheated to 200°C (approximately 400°F) for about 20 minutes.
