- 3 cups ground chicken
- 1 medium egg (beaten)
- ½ cup golden breadcrumbs
- ¼ tsp salt
- ⅛ tsp peppers
- non-stick cooking spray
- To Serve
- 8 mini Bread roll (split in half horizontally)
- Lettuce
- 8 slices Cucumber
- 8 tsps Ketchup
- 8 slices Tomatoes
- 8 slices Red onions

Preparation steps
1.
In a large bowl, combine ground chicken, egg, breadcrumbs, salt and pepper and mix well until completely incorporated.
2.
Shape the ground chicken mixture into 8 burger patties.
3.
Heat a large skillet over high heat and spray with cooking oil. Cook the burgers for about 4 minutes on each side or until golden and cooked through.
4.
Place a layer of lettuce on the bottom of each roll, followed by cucumber slices, chicken burger, ketchup, tomato and onion slices. Finish with remaining half of bread roll. Serve.
