150 grams Crème fraiche
2 eggs
50 grams grated Cheese (such as Parmesan)
2 Tbsps freshly chopped thyme

Preparation steps

Cut off tops of artichokes with scissors and remove outer leaves. Halve lengthwise, sprinkle with lemon juice and cook for about 5 minutes in plenty of boiling water, drain and rinse in cold water, drain again. Cut off 8 thin slices for garnishing.

Preheat the oven to 200 ° C upper and lower heat.

Cut remaining artichokes into pieces and arrange in 4 ovenproof serving ramekins. Peel garlic and chop finely. Whisk milk with cream, eggs, cheese and thyme. Season with salt and pepper and pour over artichokes. Bake in preheated oven at 200°C (approximately 400°F) for about 25 minutes or until golden brown.

Heat oil in a pan and cook artichoke slices for about 2-3 minutes or until golden brown. Drain on paper towels.

Remove ramekins from the oven, top with fried artichokes and garnish with thyme. Serve.
