- 14 ozs lean Sirloin steak
- 2 Tbsps green Thai curry paste
- 1 Tbsp Avocado oil
- 4 cups mixed salad
- 1 cup cherry Tomatoes (halved)
- 1 Cucumber (peeled into ribbons)
- 2 large carrots (peeled into ribbons)
- 1 Lime (juiced)
- 1 Tbsp Fish sauce
- ½ cup unsalted Peanuts
- salt
- freshly ground peppers
Preparation steps

Preheat the grill to hot. Rub the sirloin with the curry paste and season with salt and pepper.

Sit on a grilling tray and drizzle with the oil. Grill for 6 - 10 minutes, turning occasionally, until cooked to the desired degree.

Meanwhile, toss together the mixed-leaf salad, cherry tomatoes, cucumber, carrot, lime juice, fish sauce, and a little black pepper in a mixing bowl.

Remove the sirloin when ready and leave to rest, covered with foil, for at least 5 minutes.

After resting, cut into strips. Lift the salad onto plates and top with the steak and peanuts before serving.
