- 19 ozs boneless, skinless Chicken breasts (halves)
- salt (to taste)
- freshly ground Black pepper (rinsed; trimmed and roughly chopped)
- 1 Tbsp olive oil
- 1 envelope Taco seasoning (Old El Paso® recommended)
- 1 cup Tomato sauce
- 1 onion (peeled and sliced)
- 1 medium, red Bell pepper (rinsed; trimmed and roughly chopped)
- 1 can Refried Bean
- 2 cups mexican cheese blend (shredded)
- 8 cups Tortilla chip
- 1 handful shredded Lettuce (rinsed and dried)

Preparation steps

Rinse the chicken under cold running water and pat completely dry with paper towels. Cut chicken into bite-size pieces and season to taste with salt and pepper.

Heat oil in a 12-inch skillet set over medium-high heat. Cook the chicken for 5 to 7 minutes, stirring frequently, until cooked through and no longer pink in the center.

Stir in taco seasoning mix, tomato sauce, onions, peppers, refried beans and 1 cup of cheese. Reduce heat to medium, cook for 3 to 5 minutes, stirring several times, until the cheese has melted and the mixture is heated through.

Divide nacho chips between serving plates. Spoon chicken mixture over chips. Sprinkle with remaining cheese and shredded lettuce. Serve.
