- 3 cups large, raw shrimp (king prawns)
- 1 Tbsp Nut oil
- 2 tsps freshly grated ginger (grated)
- 2 cloves garlic cloves (crushed)
- 2 scallions (trimmed and chopped)
- 1 Tbsp tomato puree
- 2 Tbsps Chili bean paste
- 1 tsp Cider vinegar
- 1 tsp sugar
- 2 tsps sesame oil
- To garnish
- fresh cilantro

Preparation steps
1.
Cut the fine black vein out of the prawns, wash the prawns and dry on absorbent paper.
2.
Add the groundnut oil to a wok, add the ginger, garlic and spring onions and stir fry for 20 seconds.
3.
Add the shrimps and stir fry for 1 minute.
4.
Add the tomato puree, chilli bean sauce, cider vinegar, sugar and sesame oil and stir fry for another few minutes.
5.
Serve in bowls, garnished with fresh coriander.
