Preparation steps

1.

Drain shrimp well in a colander.

2.

Rinse chives, shake dry and thinly slice. Reserve a few whole chives for garnish.

3.

Beat the eggs in a bowl and season with salt and pepper.

4.

Heat butter in a pan. Pour in egg and cook about 8 to 10 minutes over low to medium heat while stirring.

5.

Arrange bread on 4 plates. Top with eggs, shrimp and chopped chives. Garnish with whole chives.
