½ tsp medium hot Mustard

350 grams vegetable oil (for frying)
16 Wonton wrapper (about 8x8 cm)
200 grams peeled, cooked shrimp

Preparation steps

Rinse the parsley, spin dry, set aside a few leaves for garnish and finely chop the rest. Mix the crème fraîche with mustard, chopped chervil and season with salt, pepper and lemon juice. Refrigerate. Heat the oil in a pan until bubbles rise up on a wooden stick. Wrap a bottle cork thoroughly with foil and insert a wooden skewer.

Place a wonton dough sheet over the cork, place into the hot oil and fry until golden brown and crispy. Repeat for all 20 wonton pastry sheets. Degrease on paper towels and let cool. Then in each wonton bowl, fill with shrimp, add a dollop of chervil crème fraîche and garnish with chervil leaves. Serve.
