400 grams shrimp
2 Tbsps lemon juice
1 garlic clove
5 Tbsps olive oil
salt

2 Tbsps grated Gruyere
1 ripe Mango
½ bunch young, thin scallions
Dill (for garnish)

Preparation steps

1.

Rinse shrimp, pat dry and peel (if desired, leave heads and tails on). To make marinade: Whisk lemon juice with salt to taste and olive oil. Peel garlic, press through a garlic press into marinade and season with pepper. Drizzle marinade over shrimp and marinate for 1 hour.

Place shrimp in a greased baking dish, sprinkle with cheese and bake briefly in an oven preheated to 200°C (approximately 400°F) until cheese melts.

Peel mango and slice flesh away from pit. Rinse, trim and cut scallions crosswise. Place mango and scallions on a platter, drizzle with marinade, top with shrimp and serve sprinkled with dill.
