- 500 grams shrimp
- 800 milliliters fish stock
- 100 grams button Mushroom
- 3 Tbsps olive oil
- 1 Leek
- 2 garlic cloves
- 4 centiliters Cognac
- 4 centiliters sherry
- 4 Tbsps butter
- 2 Tbsps Pastry flour
- 2 Tbsps Tomato paste
- salt
- freshly ground peppers
- cayenne pepper
- 1 Tbsp fresh thyme

Preparation steps
1.
Peel the shrimp, devein, rinse and pat dry.
2.
Simmer the shells in the fish stock for about 15 minutes, then pour through a sieve and let cool.
3.
Rinse and trim the leeks, then cut into rings.
4.
Peel the garlic and chop finely.
5.
Trim the mushrooms and chop coarsely.
6.
Sauté the garlic, mushrooms and leek in hot oil. Set aside 8 shrimp for garnish. Add the remaining shrimp and sauté together. Deglaze with the cognac and sherry and pour in the fish stock. Simmer for about 10 minutes, then puree.
7.
In another pan, heat the butter, stir in the flour and cook briefly. Add the tomato paste and deglaze with the soup. Simmer briefly. Add the remaining shrimp and simmer for about 4 minutes. Season with salt, pepper and cayenne pepper. Serve sprinkled with thyme.
