- 1 Tbsp butter
- 2 onions (finely diced)
- 3 ⅓ cups peas fresh or frozen (thawed if frozen)
- 4 cups vegetable stock
- 1 handful mixed Fresh herbs (e. g. parsley, chives, coriander, leaves picked)
- ⅔ cup milk
- 4 Tbsps Sour cream
- lemon juice

Preparation steps
1.
Heat the butter in a pan and fry the onions until translucent. Stir in the peas, deglaze with the stock and bring to the boil. Cover and simmer for around 10 minutes until soft.

Stir in the herbs and milk and blend to a fine purée using a stick blender. Depending on the desired consistency, add a little more stock or reduce a little more. Take off the heat, stir in the sour cream and season to taste with salt, ground black pepper and lemon juice.
3.
Serve with toasted garlic bread if desired.
