- 4 Avocados (peeled, pitted and diced)
- 2 large Tomatoes (diced)
- 3 large shallots (diced)
- 1 Tbsp chopped, fresh cilantro
- ¼ cup fresh Lime juice
- kosher salt (to taste)
- freshly ground Black pepper (to taste)
- 10 sheets Phyllo dough (14 x 9-inch)
- non-stick cooking spray
- 6 cups raw shrimp (peeled, deveined and diced)

Preparation steps

Preheat the oven to 450° F/230° C.

In a medium bowl, mash the avocados. Mix in the tomatoes, shallots, cilantro and lime juice. Season with salt and pepper and set aside.

Place 1 phyllo sheet on a work surface (cover remaining phyllo to prevent drying); coat phyllo with cooking spray. Cut crosswise into thirds to form 3 (4 1/2 x 9?inch) rectangles. Spread about 2 tablespoons of guacamole across 1 short end of each rectangle. Layer about 4 teaspoons of shrimp on top of the guacamole. Starting at the same end, roll up the phyllo. Arrange rolls on a baking sheet; coat rolls with cooking spray. Repeat procedure with remaining phyllo, guacamole, shrimp, and cooking spray.

Bake for 10-15 minutes or until phyllo is golden and crisp. Serve.
