For the guacamole
1 ½ large Avocados (ripe)
1 Tbsp Mayonnaise (light)
1 tsp green Curry paste
1 Tbsp Créme legére
1 Tbsp lemon juice
1 pinch sugar

1 Tbsp clarified butter
4 Cherry tomatoes

Preparation steps

For the guacamole, cut the avocado in half lengthwise and remove the pit. Loosen the pulp from the cup with a spoon. Mince the flesh coarsely, add along with the remaining ingredients in a bowl and blend finely with a hand blender. Season to taste and serve in small cups.

Rinse the tomatoes, quarter and top the guacamole. Rinse the basil, shake dry and add to cups. Cook the shrimp briefly in butter, thread with sage on the skewers, lay across the cups and serve immediately.
