1 ripe Tomato (rinsed; trimmed and finely diced)
½ cup shredded carrots
0.333 cup Cucumber (cut julienne style)
1 small, sweet, red pepper (rinsed and cut into thin strips)
½ cup finely chopped cilantro
1 Tbsp freshly squeezed Lime juice
2 Tbsps good-quality olive oil
salt (to taste)
freshly ground Black pepper (to taste)
2 Flour tortillas (10-inch / 25 cm)
4 Romaine Lettuce (rinsed and ribs cut away)
½ Avocado (sliced)
1 poached, boneless, skinless Chicken breast (shredded)

Preparation steps

In a medium bowl, combine tomatoes, carrots, cucumber, peppers and cilantro. In a small bowl, whisk lime juice and olive oil together and season to taste with salt and pepper. Drizzle the dressing over the tomato mixture and toss to coat.

Warm the tortillas in the microwave for about 10 seconds, or until just flexible. Place the warm tortilla on a clean work surface and cover with lettuce leaves, leaving a 2-inch / 5 cm border around the edges. Lay the avocado slices over the lettuce, followed by chicken and vegetables. Drizzle any remaining dressing over the chicken and vegetables.

Fold the bottom edge of the tortilla over the filling. Fold in the sides, then roll up, squeezing the tortilla so that the rolls stay together. Slice each tortilla in half. Serve.
