- 2 ½ cups Chicken breasts (cut into strips)
- 1 Tbsp vegetable oil
- 1 Bread roll (finely sliced)
- 2 ¼ cups carrots (julienned)
- 1 ⅓ cups Apple (julienned)
- 1 ⅓ cups seedless, green Grape (halved)
- 1 ⅓ cups red, seedless Grape (halved)
- 1 cup Celery (sliced)
- 2 cups Chicory (julienned)
- ¼ cup white wine vinegar
- ¼ cup olive oil
- 2 sprigs Dill
- 2 sprigs parsley

Preparation steps
1.
Heat the oven to 200°C (180°C in a fan oven), 400°F, gas 6.
2.
Fry the chicken in in a pan of hot oil for about 2 minutes and keep warm.
3.
Toast the bread slices in the oven for 10-15 minutes until golden brown and crispy.
4.
Mix together the carrots, apples, grapes, celery and chicory and dress with the white wine vinegar and the oil. Season with salt and ground black pepper.
5.
Add the still warm chicken and serve with the herbs and the toasted bread.
