- 1 Cucumber (halved and sliced)
- 1 cup Bean sprout
- 2 scallions (shredded)
- 1 Mango (peeled)
- 4 smoked Chicken breasts (shredded)
- 4 little gem Lettuce (washed and leaves separated)
- 6 Tbsps
- 3 Tbsps sweet Chili sauce

Preparation steps
1.
Put the cucumber into a bowl with the beansprouts and scallions. Season with salt and a some freshly ground black pepper.
2.
Slice the mango flesh either side of the stone, then cut into thin slices.
3.
Arrange the little gem lettuce leaves in the base of a large salad bowl.
4.
Mix together the mango slices and shredded chicken with the cucumber combination.
5.
Pour the French dressing into a jam jar, add the sweet chili sauce and shake to mix.
6.
Toss the dressing into the salad. Spoon on top of the little gem lettuce leaves.
