- 5 Tbsps sesame oil
- 2 Tbsps Sesame seeds
- 3 Tbsps Marsala wine (or dry sherry)
- 1 clove garlic cloves (crushed)
- 2 Chicken breasts (skinned and cubed)
- 1 ¾ cups Asparagus (trimmed)
- 2 onions (cut into wedges)
- 6 Tomatoes (deseeded and chopped)
- Sesame seeds (to garnish)

Preparation steps
1.
Mix 3 tbsp oil with the sesame seeds, Marsala and garlic and stir into the cubed chicken. Set aside to marinade for 1 hour.
2.
Bring a large pan of salted water to a boil and blanch the asparagus for 3 minutes. Drain, refresh under cold running water, pat dry with kitchen paper and cut into 4 cm lengths.

Remove the chicken from the marinade. Heat the remaining oil in a wok until smoking then add the chicken and stir fry for one minute. Add the onion and cook for about 3 minutes, stirring all the time.
4.
Add the tomatoes and asparagus, cook for 2 minutes then add a little of the marinade and cook for 1 more minute.
5.
Serve immediately with sesame seeds and coriander leaves to garnish.
