- For the dough
- 150 grams Pastry flour
- ½ tsp salt
- 1 pinch cayenne pepper
- 1 tsp Lemon peel
- 1 tsp thyme
- 2 Tbsps Sesame seeds
- 2 Tbsps butter
- 5 Tbsps water
- For the garnish
- Sesame seeds (for garnish)
- coarse Sea salt
- 1 egg white

Preparation steps
1.
For the dough, mix all ingredients to form a dough and knead until smooth. Roll out dough in a thin layer on a floured surface. With a round cookie cutter or other desired shape, cut out circles and cut out a small hole in middle. Place on a baking sheet lined with parchment paper and brush with egg white.

Sprinkle with sesame seeds and coarse sea salt and bake in preheated oven at 180°C (approximately 350°F) for about 20-25 minutes.
