½ cup sunflower oil
6 Tbsps Maple syrup
2 medium Zucchini (coarsely grated)
1 ½ cups all-purpose flour
1 ¼ cups Whole wheat flour
2 tsps ground cinnamon
1 tsp Baking powder
½ tsp baking soda
1 cup Golden raisins
6 Tbsps chopped Walnut
1 Tbsp Sunflower seed

1 Cutting board, 1 Small knife, 1 Small bowl, 1 Tablespoon

Preparation steps

1.
Heat the oven to 180°C/160°C fan/350°F/gas 4. Line a 900g loaf tin with baking parchment.
2.
Put the eggs, oil and syrup into a bowl and whisk together.
3.
In another bowl put all the remaining ingredients except the sunflower seeds, and mix together.
4.
Mix the wet and dry ingredients together thoroughly and then pour into the tin.
5.
Sprinkle over the sunflower seeds and bake for about 1 hour or until a skewer comes out clean when inserted into the centre. Leave until cold before slicing.
