1 Tin can (no white paint inside)
1 sheet baking paper
For the dough
1.333 cups flour
1 tsp Dried yeast
½ tsp salt
1 pinch sugar
cup Tomato juice
1 Tbsp dried Italian herbs
Plus
1 tsp Coriander

Preparation steps

1.
Line the tin with the baking paper and heat the oven to 200°C (180°C in a fan oven), 400°F, gas 6.
2.
Place all the dough ingredients in a bowl and knead into a not-to-solid dough. If necessary add a little more tomato juice or water.
3.
Place the dough in the tin, sprinkle with the coriander seeds and leave to rise until the dough reaches the edge of the tin.
4.
Bake for 45 minutes. If the bread turns golden brown before the baking time is over, cover loosely with some aluminium foil.
5.
Knock the bread out of the tin and then bake for a further 15 minutes until the underside is crusty.
6.
Leave to cool and return to the tin to serve or to give as a gift.
