- ⅔ cup all-purpose flour (sifted)
- ¼ tsp baking soda
- ¼ tsp Baking powder
- ¼ tsp salt
- 1 cup light brown sugar
- ½ cup dried Cherries
- ½ cup raisins
- 2 cups Date (pitted and chopped)
- ½ cup dried Apricot (cut into quarters)
- 3 large eggs
- 1 tsp pure vanilla extract
- 1 Tbsp brown sugar

Preparation steps
1.
Preheat the oven to 150°C (130° fan) | 300F | gas 2. Grease and line a 20 cm | 8" square baking tin with greaseproof paper.

In a large bowl, whisk together the flour, bicarbonate of soda, baking powder, and salt. Stir in the brown sugar and all the dried fruits.

In a separate bowl, beat together the eggs and vanilla until pale and thick, 3 - 4 minutes. Fold into the dried fruit mixture until a batter comes together. Scrape into the prepared baking tin and top with the demerara sugar.
4.
Bake for about 60 - 70 minutes until golden brown and has pulled away from the sides of the tin. Remove to a wire rack to cool.
5.
Once cool, turn out and cut into squares.
