Preparation steps

1.

Cut pineapple in half. Remove the top half, peel and dice flesh small. Hollow out the bottom half and dice flesh. Clean mushrooms and cut in half. Peel the shallot and chop fine, cook in oil, then add rice and continue to cook.

2.

Add mushrooms and clams. Season with salt, pepper and curry. Add pineapple and cook. In a separate pan, sear shrimp in oil on both sides. Fill hollowed-out pineapple with pineapple rice, top with shrimp and garnish with parsley leaves.
