- 200 grams Zucchini
- salt
- 100 grams Cherry tomatoes
- 1 garlic clove
- 2 Tbsps olive oil
- 8 eggs
- 2 Tbsps chopped parsley
- 2 Tbsps Whipped cream
- freshly ground peppers
- Nutmeg
- 100 grams shelled crayfish
- 50 grated Parmesan
- parsley (for garnish)

Preparation steps

Preheat the oven to 180°C (approximately 350°F) convection.

Rinse the flounder, pat dry and chop. Rinse zucchini, trim and grate coarsely. Season with salt and about 5 minutes infuse water. Pat dry. Rinse and halve the tomatoes. Peel the garlic, chop finely and sauté with the zucchini in hot olive oil in an oven-proof pan. Beat the eggs with the parsley and cream and season with salt, pepper and nutmeg. Put half of the egg mixture in the pan. Remove from heat and top with flounder, tomatoes and crayfish. Top with the remaining egg and sprinkle with Parmesan. Bake in oven 15-20 minutes. Serve sprinkled with parsley.
