1 Sea bream (700 grams, ready to cook)
200 grams firm potatoes
salt
freshly ground peppers
50 grams butter
2 Tbsps vegetable oil
fresh thyme

Preparation steps

1.

Preheat the oven to 200°C (approximately 400°F).

Rinse the potatoes, peel and cut into thin slices. Blanch in boiling salted water, drain and cool for 3 minutes. 

3.

Rinse the fish and pat dry. Place a sprig of thyme in the interior, season well with salt and pepper and sprinkle with thyme leaves. Arrange the potato slices in layers to cover the fish. Melt the butter and brush the potatoes and fish.

4.

Place in an ovenproof dish with that has been brushed with oil and bake until the potatoes are golden brown, about 20 minutes.
